MEIKEL'S KITCHEN by shizuku - Festive nut ham with sake!

He loves food, he loves cooking and he enjoys sake.
Meikel - Graphic Designer, DJ and Sake Addict - tries out, combines and discovers.

This time: A hearty, juicy nut ham, first boiled in water, then baked in the oven until crispy and finished with a sweet glaze of forest honey, rosemary and apple juice. Served with potatoes and celery puree, accompanied by a sweet red cabbage cooked with apples and cranberries - that's it.
Aside: The Kiku Masamune Taru Sake, a harmonious Junmai shortly ripened in barrels (Yoshino cedar). Tangy-fresh in the nose, with a dry, slightly resinous finish - the ideal companion.

Tip: For those who prefer it slightly sweet even in the glass, we recommend the medium-bodied and elegant Inatahime Junmai Daiginjo. An extremely complex sake, wonderfully fruity and with a smooth acidity and velvety finish.

Culinary conclusion: 'The aroma of a ham in winter is just great. Simple, familiar and hearty. The resinous, dry note of the Taru, really cool - and immediately reminds you of a fir forest. My version was more on the sweet side, so I couldn't resist trying the fruity sake with it too. A good decision!' smiles Meikel.

The raclette cheese is matured over several months, inoculated with a strong, intensive Junmai - brewed according to the traditional kimoto method - and literally refined.
The result is an incredibly mild, slightly sweet raclette cheese with a wonderful umami note.

MEIKEL'S KITCHEN by shizuku - The Winter BBQ with EDO RIBS

He loves food, he loves cooking and he enjoys sake.
Meikel - Graphic Designer, DJ and Sake Addict - tries out, combines and discovers.

This time: Spare Ribs dropped by Japan. The pork ribs are first put into sake, seasoned with a little salt, pepper and paprika powder and then put on the grill for the right barbecue touch. Finally, the spare ribs are brushed with sake, mixed with a little cane sugar - that's it.
Inside: The complex, amber-coloured Shirayuki Edo Genroku, fermented in wooden barrels (taru). A strong, multi-layered Junmai with a long, salty-sweet veil of dark chocolate, honey, yeast, dried corn as well as lime blossom and wood.

Culinary conclusion: 'Em yes, one bite and bam... Yummy it was!' laughs Meikel satisfied. 'Simple in preparation, but all the more delicate in enjoyment. The honey-sweet Edo is perfect for the glaze and goes fantastically well with this wonderful smoke aroma. This is how winter BBQ goes!'

'Sake should be drunk warm, right?'

A question that comes up again and again - and rightly so - but cannot be answered with a simple yes or no.
If a sake has enough body, means it has a low rice polish rate and thus 'more meat on the bone', it can be a real drinking experience to enjoy it warm.
Depending on the drinking temperature, the very same sake can reveal different aromas and flavours. This is another evidence that sake is a unique alcoholic beverage.

This time: The homemade summer sorbet made of Kabosu fruit liqueur - that's it.
Inside: Kabosu no Susume, the refreshing, racy, citrus-flavoured fruit liqueur, with hand-pressed Kabosu juice. Mild and extremely refreshing, complex on the palate, racy and present as well as intensely fruity. A sweet and palatable aperitif drink, with a low alcohol content and a sourish-bitter finish - a dream in sorbet!

Tip: If you prefer it pink and minty-fresh, try the sorbet also with Aka Shiso, the light, sweetish and fruity Shiso liqueur, with notes of dark berries, cassis, anise and liquorice.

Culinary conclusion: 'Wow! This Kabosu fruit really got it! An extremely refreshing citrus flavour, just the right thing for a hot summer day. Sorbet with a frozen drop of Japan - summer vibes pure!' enthuses Meikel. Experiment succeeded!

The Cloudy
Fresh, unrefined, fruity sweet and slightly bitter, this milky premium sake is a lovely and viscid-like aperitif or an exciting accompaniment to spicy dishes. The Goriki Nigori, available as MINI, MAXI or MAGNUM (Magnum bottle exclusively at shizuku Store or on request).

The Golden
Dark chocolate, honey, yeast, dried corn, lime blossom and wood. The amber-coloured Shirayuki Edo Genroku is a strong and flattering Junmai (Genshu), fermented in wooden barrels (taru). Complex, multi-layered, with a long, salty sweetish haze, it is perfect as a digestif, with spicy or seasoned dishes and delicious with blue cheese.

The Harmonious
The Kiku Masamune Taru Sake is earthy and tangy-fresh. Aged shortly in barrels (taru), this harmonious Junmai refreshes with notes of cedar and lavender. Tangy, with a dry and slightly resinous aftertaste, it is ideal as an accompaniment to fish, especially sushi and sashimi.

The Real Weight
The complex Fukugao Bourbon Barrel, matured in Bourbon barrels, is a delightful, real weight. Woody aromas of coffee and tobacco, with hints of coconut and vanilla on the nose, and fruity-sweet notes of dark chocolate and hazelnut. Smooth, sirupy and tangy at the same time.

4.5cl Havana Club Anejo 3 Anos, 3cl Kabosu liqueur, 1cl lemon juice, 1cl sugar, 2 mint twigs, 6cl ginger beer.

Drop of Japan:
Kabosu no Susume, the refreshing, racy, citrus-flavoured fruit liqueur, with hand-pressed Kabosu juice.

On Tuesday, May 12, 2020, the shizuku store will finally reopen its doors after the long break.
It goes without saying that, together with you, we will follow the well-known rules of hygiene and conduct by the BAG. For this reason, we are not yet offering tastings.

However, we are happy to advise you personally on site and motivated to surprise you with one or two new drops from Japan.

A class of its own
It could hardly be more exciting. Because our new one convinces with elegance, a balanced intensity of taste, combined with a delicate sweetness as well as a beautiful, light acidity and this until the long lasting finish. The complex X3 Rose, brewed from red rice, fills the palate for that special day.

An aperitif that makes you thirsty
The sweet, palatable and slightly bitter Iku's Shiro makes you want more. Because this Junmai Daiginjo is strongly reminiscent of juicy green apples, with additional aromas of pear, vanilla bean, white chocolate and elderberry. With an alcohol content of 9%, it is perfectly suited as a very light and elegant aperitif.

A drop of women's power
In the noble, lively, tasteful and fruity-sweet Karaku Amakuchi there is a lot of female passion. Because in the small, fine Shotoku brewery, female master brewer Ootsukasa has been ensuring exceptional quality for years with great attention to detail. Unique, even in a glass!

A sweet temptation
On the rocks and intense in taste or as a tasty addition to your cool, dry Prosecco. With the Ohako Umeshu a long, sweet afternoon is guaranteed. An excellent plum wine, strong and fruity, with a complex, spicy note.

Meikel - Graphic Designer, DJ and Sake Addict - tries, combines and discovers.

This time: A colourful mix of grilled vegetables such as red onions, pepperoni, chard, white cabbage and peas to a beef entrecôte, crowned with a nectarine chutney boiled in sake - that's it.
Inside & aside: The complex X3 Rose, brewed from red rice and three times the amount of koji. This sake convinces with elegance, a well-balanced intensity of taste, combined with a delicate sweetness as well as a beautiful, light acidity until the long lasting finish. Aromatic, wonderfully inspiring, a class of its own.

Culinary conclusion: 'Power on the grill, harmony on the plate. And this sake has real power and an extremely inspiring spiciness. Heavy and lively at the same time and with its melt also perfect for meat. The X3 Rose is definitely one of my favourites. Awesome, hell yeah!', laughs Meikel.

4cl Sake, 3cl Sherry Manzanilla, 2cl St. Germain, 1cl Kabosu liqueur, 1cl lemon juice, 1 slice of cucumber, pink pepper, top soda.

Drop of Japan: Shirayuki Akafuji, the all-rounder with citrus freshness and Kabosu no Susume, the refreshing, light, mild and racy fruit liqueur with citrus taste and with hand-pressed Kabosu juice.

These are hard times for SMEs and start-ups. But necessity is the mother of invention! The Restaurant Trübli would like to offer you a piece of normality. Via Instagram and Facebook, the team provides personal wine tips from the quarantine. And they have launched an order page where they offer their own products, but also those of their suppliers and producers at a solidarity price.
