HOT HOT HOT! The summer BBQ with steak, sausage and sake!

The hot summer days attract to the hot grill.
Whether cervelat, bratwurst, a hearty steak or a well-seasoned little fish - shizuku is happy to recommend the perfect companion to all barbecue lovers.

Fire away & kanpai - while quenching with a delicious glass of Japan...

The Umami Force
If the menu is tasty, this is your drop. Kozaemon Kimoto Junmai is simply a force in taste. Brewed according to the traditional kimoto method, this balanced sake convinces with its fresh and at the same time intense, sweet and spicy roast aromas and its very pleasant acidity - ideal with grilled meat and sausages.

The BBQ Junmai
Inatahime Ryokan surprises with a salty and leathery nose. Aromas of lime blossom and soja mixed with notes of dark chocolate, coffee, tobacco and nutmeg. A very round and intense Junmai, delightful for your barbecue.

The Tangy
Paprika, nutmeg, pine needles, olive tapenade as well as smoked ham and meat pastry in the nose and oily, resinous, smokey and spicy-fleshy in the palate. Goriki Junmai is an aromatic and powerful sake with lots of umami and the perfect match to a barbecue party.

The Adventure
Kozaemon Yamahai Junmai is a veritable taste expedition! With its intense and earthy flavours and also a lot of umami a sensational sake to hearty dishes. If it is a 'Bündner Gerstensuppe' with bacon in winter, it has to be a T-Bone steak or a juicy sausage now.

Heat up properly and treat yourself to this culinary delight.

We are also happy to recommend our sake food blog Meikel's kitchen and make you thirsty with further ideas and suggestions. Kanpai!

MEIKEL'S KITCHEN by shizuku - Orange Playground twisted by exotic Japan

He loves food, he loves cooking and he enjoys sake.
Meikel - Graphic Designer, DJ and Sake Addict - tries out, combines and discovers.

This time: A tender redfish on grilled carrots, served on a sweetish apricot purée, spiced with a little curry & chilly and a homemade, salty-tangy pesto made from fresh carrot greens - that's it.
Aside: The exotically fruity and stylishly quaffable Ootegara. Round, fresh and with a nice length, this exciting Junmai Daiginjo delights sweetly and at the same time intensely in taste. Your inviting companion!

Culinary conclusion: 'It's best to put everything on a spoon and enjoy the flavours in interplay. That's true for almost all my dishes', Meikel laughs, 'but here the harmonious mix is particularly enjoyable.
The earthy roasted aromas of the carrots, the sweetish-spicy taste of the apricots, the tender fish... Great! And this sake, chilled in the glass, plays along aromatically - light, harmonious, perfectly summery. A spoonful for the senses.'

shizuku sake cheese pairing 2022

'I want the Swiss to drink sake with their Käseplättli, cheese fondue or raclette'.
Marc Nydegger
attracted attention with this statement years ago. At the time, the young entrepreneur was - understandably - smiled at. Today he is smiling...

Umami is the secret!

On the one hand, his customers now explicitly ask for the 'fondue sake'. They also melt away when it comes to sake raclette. And the sake expert has been working closely with the neighbourhood shop Amstad Chäslädeli for years. Together they have created exciting combinations that can be enjoyed at the cozy shizuku sake cheese pairing - in a small, refined setting.

Taste exquisite premium drops from Japan in combination with selected cheese and let yourself be positively surprised by this outstanding combination.

Fresh & fruity - the Japanese spring pours

Less is sometimes actually more.
And especially in spring it can be fresh, fruity & also a little lighter...
The main thing is quaffable & palate-filling!

Our Japanese liqueurs are chilled to pour
Unlike here, in Japan, every drop that is not unmixed is a liqueur. Which doesn't mean there has to be a lot of alcohol involved. As with their artistic dishes, the Japanese also focus on drinks that are authentic, present and intensely flavourful - fresh, fruity and sometimes surprisingly light - with a variety of exciting combinations.

Sweet-sour & fresh
The Kyo Yuzu Nigori is a light Junmai Nigori with hand-pressed yuzu juice. A refreshing aperitif drink, with low alcohol content (7% Vol.) and a long-lasting finish. Pleasantly fruity on the nose and fresh and sweet-sour on the palate.

Racy & complex
The step up for yuzu lovers is called kabosu. The Kabosu no Susume is a light (4.5% Vol.), fruity and sweet junmai with hand-pressed kabosu juice. With its refreshing citrus taste and tart bitter finish also a perfect spring fruit liqueur.

Minty & fruity
The Aka Shiso looks extremely sweet because of its intense pink color, but it surprises naturally minty, refreshingly fruity and only slightly sweet. This shiso liqueur - with notes of dark berries, cassis, anise and liquorice - is really fresh and light (8% Vol.), a quaffable aperitif drink.

Strong & tangy
Not light but strong in taste, really sweet and with a complex, tangy note, the Ohako Umeshu convinces. This plum liqueur made from Gojiro plums - on a sesame-shochu base - is strongly reminiscent of marzipan and amaretto, and is perfect neat or on ice as a dessert drop or as an excellent cheese companion.

Pure, on the rocks, exciting mixed as KABOSU SOUR, KABOSUJITO or SHISO SPRITZ or served ice cold as sorbet: Enjoy the spring fresh & fruity - Japanese Style.

The magic of hanami in a sake glass

Japan smiles in delicate pink!

Celebrate with us the beauty of the cherry blossom season, the natural moment of transience and toast with us, with a playful, seductive lightness - drop by drop...

The magic of hanami in a sake glass
Floral, fruity, lively! For your hanami moment, Japan's precious drops are already chilled and are just waiting to be ceremoniously poured by you.

Exotically sweet?
Then the Ootegara is your flask! A light, exotic cocktail with notes of mango, papaya, honeydew melon, apple, pineapple, star fruit & strawberry. Round and fresh, sweet and at the same time full of flavour.

Small but mighty!
This little one plays in the league with the really big ones. Taste light, fruity and at the same time aromatic, the Kokuryu Gin no Tobira directly reminiscent of a Riesling. Fresh, elegant mineral, easy drinkable and beautifully balanced.

Strong and lively?
Then kanpai with the elegant and fruity-sweet Karaku Amakuchi. With notes of lychee and strawberries, combined with a balanced acidity and long finish, it's guaranteed to come alive in the glass.

Floral, mild & explosive!
White tulips, lime blossoms.... and then bam: Gekkeikan Daiginjo! Be pleasantly surprised by this powerful & complex flavour explosion. Fresh, mild, with a wonderful acidity - an experience.

Japan to go?
We are there! Our tiny Cup Sake Yuki Otoko convinces not only in the palate, but also practically in the handy drinking glass. Round, powdery and fresh, sweetish and at the same time tangy-bitter - the all-rounder 'ready to enjoy'.

9% lightness, 100% pleasure
This is what you can expect from a glass of Iku's Shiro. Juicy green apples, aromas of pear, vanilla bean, white chocolate and elderberry. An elegant, quaffable aperitif, with low alcohol - ideal for topping off.

We feel the spring! Do you? Then kanpai!
And a hearty arigato to our epicure Flurin for this stunning photo! May the festivities begin...

Danny serves the SAKURA

When sakura (Japanese cherry blossom) blooms, all of Japan smiles - and we raise our long drink glasses in celebration!
Kanpai at Danny's Japanese Cocktail Bar!

Danny serves today the SAKURA
with the 'drop of Japan': Inatahime Ryokan, a round, intense and rather dry Junmai. A playful sake with aromas of lime blossom, soy, bitter chocolate, coffee, tobacco and nutmeg.

How to mix...
Shake 10ml cherry liqueur (alternatively cherry brandy), 4ml grenadine, 100ml sake, 10ml pineapple syrup in a shaker for 10sec, strain into a chilled glass over a large ice cube (or top up with several small ice cubes) and top with about 150ml cherry blossom tonic (here it was the Thomas Henry Cherry Blossom).
Garnish long drink glass with a nicely sliced lemon zest as well as pickled cherries on a skewer - and kanpai.

Danny's tip...
1 big ice cube in the glass (e.g. 5x5x5cm) offers less surface than several small ones. So you have less dilution in the cocktail and your drink still stays cold for a long time.

How it tastes...
'Like a cherry, with a hint of pineapple, in a tonic! However surprisingly Japanese style', Danny smiles and pours himself another drink to celebrate hanami (Japanese cherry blossom festival). 'And the sake goes great with its flavours. A dry, tangy drink - not only at hanami ;-)'

Aside: The full-bodied and smooth Asahimai Junmai. A sake made from organic rice, subtly aromatic, with a fresh, balanced acidity, a sweet note and a lingering aftertaste.

Snow. Icy cold. Only the frosty wind laughs.

And it warms the sake heart!
Drinking nihonshu skillfully warm is a true drinking experience. Because at different drinking temperature, the same sake can develop different aromas and flavours. Give it a try and treat yourself to some warmth - Japanese style.

Fruity and versatile

New in our lineup is the Kuzuryu Ippin. Slightly sweet, fruity, with a soft texture and crisp, spicy flavours, an exciting pairing partner with a good dose of umami.

Velvety and full-bodied

Smooth, with a sweet note and a long lasting finish, the Asahimai Junmai flatters. A premium sake made from organic rice, subtly aromatic, with a fresh, minty acidity.

Round and flavourful
The rather dry Inatahime Ryokan scores slightly salty, even leathery on the nose and surprises on the palate with flavours of lime blossom, soja, bitter chocolate, coffee, tobacco and nutmeg.

Aromatic and powerful

Tangy, oily, smoky and with lots of umami? Then the Goriki Junmai is right up your alley. Intense notes from paprika to olive tapenade to smoked ham make this sake an exciting food companion.

Or degree after degree of mature elegance

Despite its maturity, the Kuzuryu Daiginjo smells pleasantly light and fruity. Its elegant, smooth flavour spreads delicately across the palate as drinking temperature rises, creating a comforting, suitably velvety sensation.

These drops can not miss in 2022...

Our newcomer, the Kokuryu Ryu Daiginjo, convinces with amazing complexity and its lively appearance. Elegantly rounded and gently aromatic, this drop will spoil any sake lover with a concise bouquet and a long aftertaste.

The red rice nihonshu
The X3 Rose immediately reminds of a rosé because of its noble color. Brewed from red rice (Menkoina) and triple the amount of koji, this complex Junmai convinces with elegance, a balanced flavour intensity, combined with a delicate sweetness as well as a nice, light acidity until the long-lasting finish.

The adventure with a lot of umami
The Kozaemon Yamahai Junmaiis a real taste expedition! With intense, earthy flavors and plenty of umami, this sake pairs sensationally with hearty dishes. If it would be the T-bone steak or a juicy sausage from the grill in summer, it is now the aromatic Bündner barley soup with bacon.

And the sake expert has been working closely with the neighbourhood shop Amstad Chäslädeli for years. Together they have created exciting combinations that can be enjoyed at the cozy shizuku sake cheese pairing - in a small, refined setting.

Danny serves the JAPANESE UNIT

The favorites from Japan, simply united...
Kanpai at Danny's Japanese Cocktail Bar!

Danny serves today the JAPANESE UNIT
with the 'drop of Japan': Inatahime Ryokan, the strong, exciting and rather dry Junmai - a round classic, a round unit.

How to mix...
30ml gin (here it was the Roku due to the Japanese botanicals), 40ml sake and 50ml matcha tea.
Add 15ml lime juice, 10ml Maraschino cherry liqueur (alternatively cherry brandy), 10ml sugar syrup.
Shake everything together with ice, strain into a pre-chilled Old Fashioned/Whiskey glass and voilà, the enjoyment can begin. Kanpai!

Danny's tip...
By the way, this very drinkable cocktail goes great with many kinds of Japanese food.
But watch out: Matcha makes you fit & awake ;)

How it tastes...
'This simply prepared cocktail captivates with many, special flavours, which remind of Japan. The journey starts thanks to the matcha tea earthy, sweet & tart and goes over nutty, almondy to fruity - with a fine cherry note. The Inatahime Ryokan with its additional flavours of lime blossom, soja, coffee, tobacco, nutmeg and dark chocolate round off this variety of flavours perfectly.
Different worlds meet and get along great. I just say 'quaffable thing' ;)'

Kokuryu - Japanese art for the eye & the palate

Dear connoisseur

For 8 years now we have been shipping the best from Japan to Switzerland - with pleasure. And year after year new breweries enrich our offer to you...

From the mountains of Fukui
The exciting products of the Kokuryu brewery were on the way by sea for the first time. Truly not 0815 sake, but special nihonshu, which makes the Japanese heart beat faster.

In the mountainous region of Fukui, an ancient land nestled between snowy peaks and the Sea of Japan, Kokuryu brews extremely high quality sake, in small batches and made by hand.

Sake in ori, silk and velvet
Kokuryu has been one of the most popular sake from Fukui for more than 200 years. But the most eye-catching feature is its noble, unique bottle labels. The textile production in Fukui has ancient roots, and so Kokuryu uses local fabrics for its labels, such as echizen-ori for Kokuryu Ryu Daiginjo and black velvet for Kuzuryu Daiginjo.

As brewers of premium sake, they see it as their mission to express the Japanese spirit in & on their products. And we are happy to pass this beautiful thought on to you in this country.
Please discover our new entries of Kokuryu, which enrich our lineup from now on...

8 infinitely good years!

Dear connoisseur
Is there a reason to celebrate again? On a Monday?! Of course there is! Today even 8 in number ;)

8 years shizuku.ch
'Wow! It seems to me, too, as if we had emptied the first refrigerated container from Japan only yesterday. Three of us, box after box, unloaded by hand. Visibly proud, massively motivated and simply overjoyed,' smiles Marc Nydegger with satisfaction.
'The joy of shizuku and every single drop is as great as on the first day. And the nice thing is: The next shipment is already on its way, including products from a new, very small, exciting and traditional brewery'.

MEIKEL'S KITCHEN by shizuku - Fluffy Pumpkin Focaccia with a kanpai

When the wind outside slowly turns autumnal, it's also getting fluffy in Meikel's kitchen.
Kanpai at the delicious sake aperitif!

MEIKEL'S KITCHEN by shizuku - Fluffy Pumpkin Focaccia with a kanpai!

He loves food, he loves cooking and he enjoys sake.
Meikel - Graphic Designer, DJ and Sake Addict - tries out, combines and discovers.

This time: Still warm from the oven.... A fluffy focaccia topped with an autumnal mix of pumpkin purée, pumpkin cubes, dried cranberries and some crème fraîche with herbs. Fresh rosemary - that's it.
Aside: The full-bodied and smooth Asahimai Junmai. A Junmai made from organic rice, velvety, subtly aromatic, and with its sweet, yeasty note, the perfect umami companion to Meikel's autumnal pumpkin pastry.

Culinary conclusion: 'Autumn, it's time for the pumpkin!' laughs Meikel. 'And when shizuku is also celebrating its 8th anniversary, surely this is the opportunity to serve up my beloved focaccia for the aperitif. Soft, tart - and in my version also sweet, fresh & fruity - it goes just perfectly with one of my favourites from Marc's sake range: the Asahimai. Honestly, this sake goes actually always. But the velvety in the glass in combination with the fluffy on the palate - such aperitifs should happen more often.'

As simple. As good. MEIKEL'S KITCHEN by shizuku.
